Peach Glazed Pork Chops – Loosely Paleo

So eating paleo was pretty awesome at first, what with all the bacon and cheese and veggies… the butter and fresh food, the burger wraps… eating all I wanted and still feeling good. But things sorta got boring after a while and trying to stick to it again after having totally abandoned it for a month or three, has really made it harder to follow it strictly. So I am really trying to make things more interesting. Sometimes it is a colossal fail. And sometimes things come out pretty big good, like these peach glazed pork chops.

Ingredients

1 peach
1 Tablespoon honey
2 Tablespoons water
4 pork chops
salt

Preheat oven to 400º.

Over medium high heat, cook the peach, peeled, cored and diced, with the honey and water in a small sauce pot.
Cook for 8-10 minutes, until the peach is tender.

With a stick blender, puree the peaches to a applesauce-like consistency.

Set aside.

Place the pork chops in a baking dish and sprinkle with salt.

Pour the peach mixture over the pork chops.

Bake at 400° for about 20 minutes until the pork is cook through. Depending on the thickness of the pork chops, you may cook for a longer or shorter time.

Serve hot, with lots of veggies!!
