In October I got a new job, followed by 3 weeks of being sick, then I just kinda dropped the ball. With work and the holidays, I was just too tired to write. Now that the new year has started and i just got over being sick and snotty for the second time, I figured it was time to get back to the blog.
Today, I want to share with you a semi-paleo corn chowder recipe. It is not quite paleo because of the corn but if you are willing to let it slide, it is a nice filling meal to keep you warm on a chilly winter night. Honestly, I made this recipe up from looking at a few chowder recipes. I have never had real chowder, probably because I rarely leave Texas and chowder if a New England dish, but what I made tasted pretty good, so this recipe is a definite keeper.
6 ears corn on the cob, grilled
6-8 slices bacon, diced
4 stalks celery
1 medium white onion
1 box chicken or veggie stock
1/2 – 1 cup heavy cream
Add the chicken stock and begin to cook over medium high heat.
Stir everything together and serve.
