Corn Chowder – Loosely Paleo

In October I got a new job, followed by 3 weeks of being sick, then I just kinda dropped the ball. With work and the holidays, I was just too tired to write. Now that the new year has started and i just got over being sick and snotty for the second time, I figured it was time to get back to the blog.

cornchowder11Today, I want to share with you a semi-paleo corn chowder recipe. It is not quite paleo because of the corn but if you are willing to let it slide, it is a nice filling meal to keep you warm on a chilly winter night. Honestly, I made this recipe up from looking at a few chowder recipes. I have never had real chowder, probably because I rarely leave Texas and chowder if a New England dish, but what I made tasted pretty good, so this recipe is a definite keeper.

Ingredients

6 ears corn on the cob, grilled
2 potatoes
6-8 slices bacon, diced
4 stalks celery
1 medium white onion
1 box chicken or veggie stock
1/2 – 1 cup heavy cream
thyme

cornchowder1First, cook the bacon over medium high heat.

cornchowder3Remove the bacon and all but a tablespoon of grease. Add the onion and celery.

cornchowder4In a large stock pot, add the onion, celery and potatoes.cornchowder5

Add the chicken stock and begin to cook over medium high heat.

cornchowder2Cut the cooked, grilled corn off the cob.

cornchowder6Add the corn.

cornchowder7Add the bacon.

cornchowder8Continue to cook until the potatoes are tender and cooked through.

cornchowder9Once the potatoes are cooked, use and immersion blender to cream the soup, focusing breaking up the potatoes.

cornchowder10Add cream and thyme(about a teaspoon fresh). I added a little too much thyme, which was fine for me because I like thyme but it kinda overpowered the dish and might be unpleasant for others.

Stir everything together and serve.
